Job Summary:
The Chef de Partie (CDP) is responsible for managing a specific section of the kitchen (e.g., sauces, grill, pastry, etc.), ensuring high-quality food preparation, maintaining hygiene standards, and supporting the Sous Chef and Head Chef in kitchen operations. The CDP must have strong culinary skills, leadership abilities, and a passion for delivering exceptional dishes.
Key Responsibilities:
- Food Preparation & Cooking:
- Prepare, cook, and present dishes according to restaurant standards and recipes.
- Oversee a specific station (e.g., appetizers, meats, fish, desserts) and ensure consistency.
- Monitor food stock, manage ingredient orders, and minimize waste.
- Kitchen Operations:
- Ensure all dishes are prepared on time and meet quality standards.
- Assist in menu planning and development under the guidance of senior chefs.
- Train and guide Commis Chefs and Demi-Chefs in their duties.
- Hygiene & Safety Compliance:
- Maintain cleanliness and sanitation in the assigned section.
- Follow food safety regulations (HACCP) and ensure proper storage of ingredients.
- Adhere to health, safety, and hygiene policies at all times.
- Teamwork & Communication:
- Collaborate with other kitchen staff to ensure smooth service.
- Report any issues (equipment malfunctions, shortages) to the Sous Chef.
- Quality Control:
- Taste dishes, check presentation, and ensure consistency.
- Uphold portion control and plating standards.
Qualifications & Skills:
- Education: Culinary school diploma or equivalent experience.
- Experience: 2+ years in a professional kitchen (CDP or Demi-Chef role preferred).
- Technical Skills: Proficient in station-specific cooking techniques.
- Soft Skills: Team player, attention to detail, ability to work under pressure.
- Certifications: Food Handler’s Certificate (required); additional culinary certifications a plus.
