The Role:
We are seeking a highly creative, passionate, and experienced Pastry Sous Chef to support the Executive Pastry Chef in leading our talented pastry team. The ideal candidate is an artist at heart with a strong technical foundation, a keen eye for detail, and a dedication to the highest standards of quality and consistency. You will play a pivotal role in menu development, daily production, and mentoring a team to deliver unforgettable sweet creations for our guests.
Key Responsibilities:
Kitchen Operations & Quality Control:
- Assist the Executive Pastry Chef in the daily operation of the pastry and bakery kitchen.
- Ensure all pastries, desserts, breads, and baked goods are prepared to the highest quality standards, consistency, and presentation.
- Oversee production for all hotel outlets, including restaurants, in-room dining, banquets, and specialty outlets.
- Maintain strict adherence to recipes, portion controls, and food costing guidelines.
- Conduct regular quality checks on all products and ensure proper storage and rotation (FIFO).
Leadership & Team Development:
- Supervise, train, and motivate the pastry team, fostering a positive, collaborative, and productive work environment.
- Provide hands-on guidance and coaching to Commis, Demi-Chefs, and Chef de Parties.
- Assist in scheduling, staffing, and managing the team's performance.
Creativity & Menu Development:
- Contribute innovative ideas for new pastries, desserts, seasonal menus, and promotional offerings.
- Assist in the research, development, and costing of new menu items.
- Demonstrate expertise in various pastry disciplines, including plated desserts, chocolate work, sugar art, viennoiserie, and bread baking.
Administration & Compliance:
- Uphold and enforce all Four Seasons health, safety, and sanitation standards (HACCP).
- Manage inventory, ordering, and cost control for the pastry department.
- Ensure all kitchen equipment is properly used and maintained.
Qualifications & Requirements:
- Culinary Degree or recognized apprenticeship in Pastry Arts.
- A minimum of 3-5 years of experience in a pastry role, with at least 2 years in a supervisory capacity (Chef de Partie or Junior Sous Chef) within a luxury hotel or high-end restaurant environment.
- Exceptional technical skills across a wide range of pastry and baking techniques.
- Proven creativity and a strong artistic flair with a portfolio of work.
- Strong leadership, communication, and interpersonal skills.
- Ability to work effectively under pressure in a fast-paced environment.
- Excellent organizational and time-management skills.
- Thorough knowledge of food safety and sanitation principles.
- Flexibility to work early mornings, late nights, weekends, and holidays as required.
