Position Summary
We are seeking a highly creative and experienced Chef De Cuisine - Japanese Specialty to lead our kitchen in the development and execution of an authentic, innovative, and exceptional Japanese culinary program. You will be responsible for every aspect of the kitchen, from menu conception and sourcing the finest ingredients to managing the brigade and ensuring the highest standards of quality and consistency. Key Responsibilities
Kitchen Leadership & Operations:
- Oversee all daily kitchen operations, including preparation, cooking, and presentation of all dishes.
- Develop and implement standardized recipes and techniques, ensuring consistency and efficiency.
- Manage inventory, food costing, and purchasing to meet financial targets and minimize waste.
- Ensure strict compliance with all health, safety, and sanitation regulations (HACCP).
Culinary Innovation & Menu Development:
- Design, create, and seasonally update a sophisticated menu showcasing authentic Japanese cuisine, which may include sushi, sashimi, robatayaki, tempura, and modern interpretations.
- Source and build relationships with premium suppliers for the freshest fish, specialty ingredients, and authentic Japanese products.
- Maintain an unwavering commitment to quality, taste, and visual presentation.
Team Management & Development:
- Recruit, train, mentor, and lead a team of cooks and kitchen staff, fostering a culture of excellence, collaboration, and continuous improvement.
- Conduct performance reviews and provide constructive feedback to develop team members' skills.
- Schedule and manage labor costs effectively.
Guest Experience & Collaboration:
- Work closely with the Front of House and management teams to ensure a seamless and exceptional guest experience.
- Engage with guests when appropriate to share the story behind the dishes and receive feedback.
- Uphold the reputation and brand standards of Island Playground.
Qualifications & Experience
- Minimum of 5-7 years of culinary experience, with at least 3 years in a leadership role (Sous Chef or Chef de Cuisine) within a high-volume, authentic Japanese restaurant.
- Proven expertise in traditional Japanese culinary arts, including but not limited to sushi and sashimi preparation, knife skills, and a deep understanding of Japanese ingredients and flavors.
- Strong financial acumen with experience in menu costing, inventory management, and P&L accountability.
- Exceptional leadership and interpersonal skills, with a proven ability to inspire and develop a team.
- Creative and passionate about food, with a keen eye for detail and presentation.
- Ability to thrive in a fast-paced, high-pressure environment.
- Formal culinary training or a recognized apprenticeship is a plus.
- Must be flexible to work evenings, weekends, and holidays as required.
