Executive Sous Chef

Position Summary
We are seeking a dynamic and experienced Executive Sous Chef to support the Executive Chef in leading our culinary operations. The ideal candidate will be a creative leader with a passion for excellence, a deep understanding of international and Thai cuisine, and a proven track record in a high-volume, luxury resort environment. You will be responsible for maintaining the highest standards of food quality, hygiene, and team management across all outlets.
Key Responsibilities
- Kitchen Leadership: Assist the Executive Chef in managing all kitchen operations, including banquet functions, specialty restaurants, and staff cafeteria.
- Quality & Consistency: Ensure all food preparation, presentation, and recipes meet Marriott's exacting standards and brand specifications.
- Team Management: Supervise, train, motivate, and schedule kitchen staff (commis, cooks, chefs de partie). Foster a positive, collaborative, and high-performance work environment.
- Cost Control: Assist in managing food costs, labor costs, and kitchen budgets. Minimize waste and optimize inventory through effective ordering and stock management.
- Menu Development: Contribute to the creation of new menus, seasonal offerings, and promotional culinary events.
- Health & Safety: Enforce strict hygiene, sanitation, and safety standards (HACCP) in compliance with local regulations and Marriott policies.
- Guest Satisfaction: Respond promptly to guest feedback and special requests to ensure an exceptional dining experience.
Qualifications & Experience
- Culinary degree or equivalent certification from a recognized institution.
- Minimum of 5-7 years of progressive culinary experience, with at least 2-3 years in a Sous Chef or similar supervisory role in a 5-star hotel or resort.
- Extensive knowledge of Thai, Asian, and international cuisines. Knowledge of seafood is a plus.
- Strong leadership, communication, and interpersonal skills.
- Proficiency in kitchen management software, inventory systems, and Microsoft Office.
- Ability to work under pressure, manage multiple priorities, and maintain a calm demeanor.
- Excellent command of English; Thai language skills are beneficial.
