Your Role & Responsibilities:
As a key member of our Pastry Team, you will be responsible for executing and maintaining the highest standards of production across all pastry outlets. Your role is crucial in delivering memorable experiences to our guests.
- Production & Quality Control:
- Prepare and present a wide variety of high-quality pastries, desserts, breads, and confectionery according to standardized recipes and specifications.
- Focus on large-scale banqueting and event production, ensuring consistency, precision, and timing for events of up to 1000+ guests.
- Operate and maintain specialized pastry equipment, including gelato machines, chocolate temperers, and deck ovens.
- Ensure all products meet the hotel's standards for freshness, taste, and visual appeal.
- Section Leadership (Chef de Partie):
- Take ownership of a specific section within the pastry kitchen (e.g., plated desserts, banqueting, bread & breakfast, chocolate & petit fours).
- Supervise and guide Demi Chef de Partie and Commis Chefs, ensuring their work meets established standards.
- Assist in managing food costs, minimizing waste, and maintaining accurate par levels for your section.
- Organization & Compliance:
- Maintain impeccable cleanliness and organization in all work areas, adhering to strict HACCP and food safety regulations.
- Properly label, date, and store all products.
- Conduct routine checks of equipment and report any maintenance needs.
- Teamwork & Development:
- Work seamlessly as part of a diverse, international team, supporting colleagues during peak periods.
- Demonstrate flexibility in rotating through different pastry sections as required by operational needs.
- Show eagerness to learn new techniques, share knowledge, and contribute to menu development ideas.
