Chef de Partie (Pastry)
Salary Range: AED 4,000 – 5,000
Job Summary:
We are looking for a creative and meticulous Chef de Partie (Pastry) to join our culinary team. You will be responsible for the production and presentation of all pastries, desserts, breads, and other baked goods. This role requires a keen eye for detail, a passion for precision, and a deep understanding of patisserie techniques. You will work to delight our guests with visually stunning and delicious sweet creations.
Key Responsibilities:
- Pastry Production: Execute the daily production of a wide range of pastries, including cakes, tarts, plated desserts, viennoiserie, bread, and chocolates, following standardized recipes.
- Section Management: Manage the pastry section, ensuring all mise en place is completed and stations are set up for service and production.
- Quality & Consistency: Ensure all pastry items are consistent in quality, size, presentation, and flavor. Pay extreme attention to detail in finishing and decoration.
- Recipe Adherence: Strictly follow recipes, portion controls, and finish/presentation standards as set by the Executive or Pastry Chef.
- Inventory Management: Monitor and manage pastry ingredient stock, reporting low stock levels and ensuring the correct storage of all items (e.g., chilling, freezing).
- Equipment Maintenance: Operate and maintain all pastry kitchen equipment, such as ovens, mixers, and proofers, according to safety and sanitation standards.
- Innovation & Development: Actively participate in the development of new dessert menus, seasonal offerings, and creative specials.
- Hygiene Standards: Maintain an impeccably clean and organized work area, adhering to the highest standards of food safety and sanitation.
Qualifications & Requirements:
- Certification from a recognized culinary or pastry arts school.
- Minimum of 2-3 years of experience as a Pastry CDP or Demi CDP in a hotel or high-end restaurant.
- Expertise in a wide range of patisserie skills, including baking, chocolate work, sugar work, and fermentation.
- Strong artistic and creative skills with a passion for beautiful presentation.
- Meticulous attention to detail and a commitment to quality.
- Ability to work early mornings, late nights, weekends, and holidays as required.
