CHEFS (Commis, DCDPs, CDPs)
Location: Malta (Various Hotels/Restaurants)
Contract: Full-time, Permanent
Overview:
We are seeking skilled and passionate chefs at various levels to join dynamic kitchen brigades in high-quality establishments across Malta. You will be responsible for preparing and presenting dishes to the highest standards, ensuring consistency and contributing to a smooth kitchen operation.
Key Responsibilities:
- Commis Chef:
- Assist the Demi Chef and CDP in daily food preparation and mise-en-place.
- Learn and master basic cooking techniques, knife skills, and kitchen procedures.
- Maintain cleanliness and organization in your section (fridge, shelves, workstations).
- Receive and store deliveries correctly.
- Follow recipes, portion controls, and presentation specifications as directed.
- Demi Chef de Partie (DCDP):
- Run a specific section of the kitchen (e.g., sauces, grill, larder) under the guidance of the CDP.
- Supervise and guide Commis Chefs.
- Ensure all dishes from the section are prepared on time and to the correct standard.
- Monitor stock levels, assist with ordering, and minimize waste.
- Uphold all health, safety, and hygiene regulations (HACCP).
- Chef de Partie (CDP):
- Take full responsibility for a designated section (e.g., Pastry, Butchery, Fish, Veg).
- Plan, prepare, and cook all menu items for your section efficiently.
- Control food cost and quality within your section, managing portioning and waste.
- Train and motivate junior chefs (DCDPs, Commis) in your team.
- Collaborate with the Sous Chef and Head Chef on menu development and specials.
Requirements:
- Proven experience in a similar role and kitchen level.
- Culinary school diploma or equivalent apprenticeship is preferred.
- Strong knowledge of cooking techniques, ingredients, and equipment.
- Ability to work under pressure in a fast-paced, hot environment.
- Excellent teamwork and communication skills.
- For CDP: Leadership skills and experience in managing a section.
- Flexibility to work shifts, weekends, and public holidays.
- Knowledge of HACCP and food safety standards.
