Chef De Partie (with Breakfast Chef experience)

Job Overview:
As a Chef De Partie, you will be responsible for running a specific section of the kitchen (e.g., grill, sauté, pastry). Your specialized experience in breakfast service is crucial, as you will lead the preparation and execution of breakfast/brunch offerings, maintaining high standards of quality, consistency, and speed during morning operations.
Key Responsibilities:
- Prepare, cook, and present dishes within your section according to standard recipes and specifications.
- Lead the breakfast shift, overseeing the preparation of all breakfast items including eggs, pastries, hot dishes, and smoothies.
- Ensure mise-en-place is completed for all stations before and during service.
- Supervise and guide Commis Chefs and trainees within your section.
- Monitor food stock, place orders, and minimize waste within your section.
- Maintain the highest standards of food hygiene, safety, and cleanliness (HACCP).
- Ensure all food is stored, handled, and cooked at correct temperatures.
- Collaborate with other sections to ensure timely and synchronized service.
- Assist the Sous Chef in developing new menu items, especially for breakfast/brunch.
Qualifications & Skills:
- Culinary school diploma or equivalent apprenticeship.
- Minimum of 3-4 years of kitchen experience, with at least 1-2 years in a Chef De Partie or similar role.
- Demonstrable and significant experience as a Breakfast Chef is mandatory.
- Strong knowledge of cooking techniques, ingredients, and equipment, with a focus on breakfast cuisine.
- Leadership skills and the ability to work under pressure.
- Excellent understanding of health, safety, and hygiene regulations.
