SOUS CHEF
Job Title: Sous Chef
Reports To: Head Chef / Executive Chef
Location: Boutique Hotel, Malta
Contract: Full-Time, Permanent
The Opportunity:
We are seeking a passionate and experienced Sous Chef to join the culinary team of our prestigious Boutique Hotel in Malta. You will be the right hand to the Head Chef, playing a pivotal role in maintaining the highest standards of food quality, consistency, and kitchen operations. This is a hands-on leadership position for a creative individual who thrives in a dynamic, detail-oriented environment.
Key Responsibilities:
- Kitchen Leadership: Assist the Head Chef in the daily management and smooth running of the kitchen, including all sections (hot, cold, pastry).
- Food Production: Oversee food preparation, cooking, and presentation to ensure dishes meet our strict recipes, portion controls, and quality standards.
- Menu Development: Contribute creative ideas and assist in developing seasonal menus, specials, and banquet offerings.
- Team Supervision: Supervise, train, and motivate junior chefs and kitchen porters, fostering a positive, professional, and disciplined work environment.
- Stock & Cost Control: Assist with inventory management, ordering supplies, and minimizing waste to help meet financial targets.
- Hygiene & Safety: Enforce the highest standards of cleanliness, food safety (HACCP), and health & safety regulations in all kitchen areas.
- Service Coordination: Work the line during peak service periods, ensuring timely and efficient delivery of orders.
- Administration: Help maintain kitchen records, including temperature logs, staff schedules, and training documentation.
Requirements:
- Proven experience as a Sous Chef, Senior Chef de Partie, or equivalent role in a high-quality hotel or restaurant.
- Formal culinary education or accredited apprenticeship is preferred.
- Strong knowledge of modern European and Mediterranean cuisines; knowledge of Maltese cuisine is a plus.
- Excellent leadership, communication, and organizational skills.
- In-depth understanding of HACCP, health & safety, and sanitation regulations.
- Ability to work under pressure in a fast-paced environment, including evenings, weekends, and holidays.
- Fluency in English is essential; knowledge of other languages is beneficial.
- A positive attitude, strong work ethic, and a commitment to excellence.
