Job Description – CDP – Cold Kitchen (Chef de Partie)
A Chef de Partie (CDP) – Cold Kitchen is responsible for managing the cold kitchen section, preparing and presenting cold dishes according to restaurant recipes, quality standards, and food safety requirements. The role requires expertise in salads, appetizers, cold mezze, sauces, and other chilled food preparations.
Key Responsibilities
- Manage daily operations of the cold kitchen section.
- Prepare and present cold dishes such as salads, appetizers, cold mezze, dips, dressings, and garnishes.
- Prepare ingredients and complete daily mise en place before service.
- Follow approved recipes, portion standards, and presentation guidelines.
- Ensure freshness, quality, and consistency of all cold kitchen items.
- Maintain proper food storage, labeling, and temperature control.
- Follow food safety, hygiene, and sanitation procedures.
- Prevent cross-contamination through safe food handling practices.
- Maintain cleanliness and organization of the cold kitchen workstation.
- Monitor stock levels and report shortages or wastage.
- Coordinate with Head Chef, Sous Chef, and other kitchen team members.
- Guide and train Commis Chefs and kitchen assistants when required.
- Assist with menu preparation and development of cold dishes.
- Ensure equipment and tools are properly maintained and used safely.
Qualifications
- Previous experience as a Chef de Partie – Cold Kitchen in a restaurant, hotel, or catering environment.
- Experience in Arabic cuisine and cold mezze preparation is preferred.
- Strong knowledge of salads, appetizers, sauces, dressings, and food presentation.
- Understanding of food safety, hygiene, and storage procedures.
- Culinary qualification or professional kitchen training is an advantage.
- Ability to work efficiently during busy service periods.
