Western Chef — Job Description
Job Summary
The Western Chef is responsible for preparing and presenting high-quality Western cuisine while maintaining consistent standards of taste, presentation, portion control, food safety, and hygiene. The role supports smooth kitchen operations and ensures that all dishes are prepared according to approved recipes and culinary standards.
Key Responsibilities
- Prepare and cook a variety of Western and Continental dishes according to established recipes and standards.
- Ensure high standards of food quality, taste, texture, presentation, and portion control.
- Prepare mise en place and ensure all ingredients are ready for service.
- Operate kitchen equipment safely and efficiently.
- Maintain consistency in preparation and presentation during every service period.
- Prepare dishes such as soups, salads, appetizers, pasta, pizza, sandwiches, sauces, steaks, seafood, grilled items, and other Western specialties as required.
- Follow standardized recipes, cooking methods, and plating guidelines.
- Monitor the freshness and quality of ingredients before preparation.
- Maintain proper food storage, labeling, temperature control, and stock rotation.
- Follow HACCP, food safety, hygiene, and sanitation standards at all times.
- Minimize food wastage and use ingredients efficiently.
- Assist with daily stock checks and inform the Sous Chef or Executive Chef of shortages or quality concerns.
- Maintain cleanliness and organization of workstations, kitchen equipment, and storage areas.
- Coordinate with other kitchen sections to ensure timely and efficient food production.
- Assist in menu development and suggest new dishes or improvements when required.
- Support buffet operations, banquets, special events, and à la carte service.
- Train and guide junior kitchen team members in food preparation and kitchen procedures.
- Report equipment defects, food-quality issues, and operational concerns to the supervisor.
- Follow all company policies, kitchen procedures, and health and safety regulations.
Qualifications
- Diploma or Certificate in Culinary Arts, Hotel Management, or a related field.
- Formal culinary training from a recognized institution is preferred.
- Typically 3–5 years of experience in Western/Continental cuisine, preferably in a hotel, resort, or quality restaurant.
- Experience in international or multi-cuisine kitchens is an advantage.
Required Skills & Competencies
- Strong knowledge of Western/Continental cuisine and cooking techniques.
- Good understanding of sauces, stocks, soups, pasta, meat, poultry, seafood, and grilling techniques.
- Strong food presentation and plating skills.
- Knowledge of food safety, hygiene, and HACCP principles.
- Good knife-handling and kitchen-equipment skills.
- Ability to follow standardized recipes and portion controls.
- Good teamwork and communication skills.
- Ability to work efficiently under pressure during busy service periods.
