Oriental Chef — Job Description
Job Summary
The Oriental Chef is responsible for preparing and presenting high-quality Asian and Oriental cuisine while maintaining consistent standards of taste, authenticity, presentation, portion control, food safety, and hygiene. The role ensures efficient kitchen operations and supports the culinary team in delivering an excellent dining experience.
Key Responsibilities
- Prepare and cook a variety of Oriental and Asian dishes according to established recipes and culinary standards.
- Demonstrate knowledge of cuisines such as Chinese, Thai, Japanese, Korean, Vietnamese, and other Asian cuisines, as required by the establishment.
- Ensure consistency in taste, texture, aroma, presentation, and portion sizes.
- Prepare daily mise en place and ensure all ingredients are available and properly prepared before service.
- Prepare appetizers, soups, noodles, rice dishes, stir-fries, dim sum, seafood, meat, poultry, sauces, and other Oriental specialties.
- Apply appropriate cooking techniques including stir-frying, steaming, deep-frying, braising, grilling, wok cooking, and steaming.
- Prepare and maintain stocks, sauces, marinades, dressings, and other essential Oriental preparations.
- Follow standardized recipes and plating specifications.
- Ensure the freshness and quality of all ingredients before and during food preparation.
- Maintain proper food storage, labeling, temperature control, and stock rotation.
- Follow HACCP, food safety, hygiene, and sanitation standards at all times.
- Monitor ingredient usage and minimize food wastage.
- Assist with stock checks and communicate shortages or quality concerns to the Sous Chef or Executive Chef.
- Maintain cleanliness and organization of workstations, wok stations, equipment, and storage areas.
- Coordinate with other kitchen sections to ensure timely food preparation and smooth service.
- Assist with buffet, à la carte, banquet, catering, and special-event operations.
- Contribute ideas for new dishes, seasonal menus, promotions, and improvements to existing recipes.
- Ensure appropriate presentation and garnish according to the restaurant or hotel's standards.
- Train and guide Commis Chefs and junior kitchen staff in Oriental cooking techniques and kitchen procedures.
- Report equipment defects, food-quality issues, and operational concerns promptly.
- Follow all company policies, standard operating procedures, health regulations, and workplace safety requirements.
Qualifications
- Diploma or Certificate in Culinary Arts, Hotel Management, or a related field.
- Formal culinary training from a recognized institution is preferred.
- Typically 3–5 years of relevant experience in Oriental/Asian cuisine, preferably in a reputed hotel, resort, or restaurant.
- Experience working in an international or multi-cuisine kitchen is an advantage.

- Strong knowledge of Oriental/Asian cuisine and cooking techniques.
- Excellent wok-handling and Asian cooking skills.
- Knowledge of Asian ingredients, herbs, spices, sauces, noodles, rice, and specialty products.

- Strong food presentation and plating skills.
- Knowledge of food safety, hygiene, and HACCP principles.
- Good knife skills and safe handling of kitchen equipment.
